The local flavor

Caseus

Salemme Pepper has traveled to US restaurants and kitchens coast to coast, from NYC to San Francisco; and world-wide it has landed in countries including Italy, Argentina, Brazil, India, China, Korea, and Australia. But the Salemme Pepper has it’s humble roots in the central Connecticut shoreline, an area known for its foodie culture.

Over the years the pepper has been popped up in some of the regions best delicatessens and shops, but also has been featured as a key ingredient on the menus of some of the most renowned bistros and fine dining establishments in this beautiful state.

Salemme Pepper has been getting particular accolades in the city of New Haven, home to Yale University and a staggering array of amazing restaurants. Close in proximity and of course age to New York and Boston, New Haven is a community with a vibrant food scene that holds it’s own. For instance have a stop at Kitchen Zinc, to see how the Broccoli Rabe pizza handles some heat — this delicious pie has a crispy thin crust and is topped with roasted garlic, ricotta salata, mozzarella, and Salemme Pepper.

But the pepper goes far beyond the tradition of New Haven pizza, you’ll find it used across the city in anything from salads to chocolate: the bar Ordinary, located in the post-prohibition tap room of the 1911 Hotel Taft, offers Chucklettes Truffles — dark chocolate, hand-made bon bons with Mezcal and Salemme Pepper. Then the pepper gets the royal treatment at the downright swank restaurant 116 Crown. Here they give a bold finish to one of their iconic signature cocktails: the “Forth & Clyde” — made with Hendricks Gin, Maker’s Mark, St. Germain, fresh-squeezed lime juice, local honey, and Salemme Pepper flakes. The list goes on, but below are just a few of our growing group of friends and partners that make the local hot list.
